Campfire Cooking: Smash Burger Tacos

To celebrate warmer weather, we hosted April Pollock at Postcard Cabins Skagit Valley outside of Seattle so she could disconnect from the noise and reconnect to her love of cooking in nature. During her stay she crafted these delicious Smash Burger Tacos—read on for her recipe and to hear more about her getaway.

Ingredients: 

  • Cast Iron
  • Taco Tortillas
  • Ground Beef
  • Garlic Salt
  • Pepper
  • Sharp Cheddar Cheese
  • Lettuce
  • Tomato
  • Red Onion
  • Pickles
  • Burger Sauce (or course, you can top with anything you’d like and switch out your favorite protein)

Instructions:

  1. Once Cast iron is hot, add raw ground beef in a small circular layer on the flour tortilla. Top with garlic salt and pepper. Place in skillet beef side down. Flip once beef is cooked to your desire and add cheese.
  2. Once cheese is melted, take off the heat – add your toppings and dig in! The cast iron specifically turns the tortilla into a crunchy tostada and with the campfire… the flavor is unmatched!

What makes the perfect summer recipe? Burgers are a favorite in the summer, but this recipe adds everything we love about a burger and a taco into one! This is also a great recipe for larger families or travel companions because each person can customize their toppings exactly to their liking.

How will you be enjoying the long Summer days this year? We loved our getaway in Skagit Valley because we were able to find a lake to relax by. We also love grilling and enjoying meals outdoors. 

How did you recharge on your escape to nature? Locked our phone away! Read a book and snoozed a lot in-between pages. We have two little kids at home, so a break was just what mom & dad needed!
