Campfire Cooking: Maple Bacon French Toast with Seasonal Summer Peaches

To celebrate the start of summer we hosted Alyssa Justice at Getaway Big Bear outside of LA so she could disconnect from the noise and reconnect to her love of cooking in nature. During her stay she crafted this delicious Maple Bacon French Toast—read on for her recipe and to hear more about her Getaway.

Ingredients:

  • 3 slices of bacon, cooked and cut into small pieces
  • 2 Tbsp. butter
  • 6 slices of brioche bread
  • 3 eggs
  • 3 Tbsp. of milk
  • 2-3 peaches, sliced
  • Pure Maple Syrup
  • Cinnamon to garnish

Instructions:

  1. Heat your pan up to medium heat with 1 tbsp of butter.
  2. While the pan is heating, add eggs and milk in a bowl and whisk until fully combined. 
  3. Pour the egg mixture into a plate that has sides on it so it doesn’t spill out and add 1 slice of bread to it. Flip so that both sides of the bread are covered in the egg mixture.
  4. Add the slice of bread to the heated pan and cook until both sides of the bread are browned.
  5. Repeat steps 2-4 until all slices of bread are cooked – use the butter as needed throughout this process.
  6. Cut your bread into triangles and arrange them on your plate. Top with bacon pieces and sliced peaches. Drizzle with pure maple syrup and cinnamon.
  7. Enjoy!

French toast makes for a lighter and quick breakfast on a slow summer morning. The addition of the seasonal peaches highlights flavors and textures that only summer can provide.

How will you be enjoying the long Summer days this year?

I’ll be enjoying these long summer days at the pool with my kids, camping in the woods with my family, or cooking up delicious meals in the kitchen. 

How did you recharge on your escape to nature?

To recharge, I stayed disconnected from the internet, slept in, read, ate nutritious food, and enjoyed the lake and beautiful nature views all around me while at Big Bear!
