Campfire Cooking: Stuffed Sweet Potatoes

To celebrate the best season to escape to nature, we hosted Thuy Pham of @tees_cravings at Postcard Cabins Brazos Valley so she could reconnect to her love of cooking and her family in nature. During her stay she crafted these delicious stuffed sweet potatoes. Read on for her recipe.

Ingredients:

  • Sweet potatoes
  • Marshmallows
  • Brown sugar
  • Cinnamon
  • Butter

Instructions:

  1. Boil the sweet potatoes until soft.
  2. Once the sweet potatoes are soft, wrap it in foil and put it over the fire for another 10 mins (this step is optional).
  3. Cut the sweet potatoes to add your stuffings.
  4. Add a small slice of butter, brown sugar, marshmallows and cinnamon.
  5. Torch it up or put it over the fire to melt everything together!
  6. Mix it up and enjoy!

How did you recharge on your escape to nature?

It felt wonderful to break free from the hustle and bustle of city life and immerse ourselves in nature alongside my favorite person and our dogs. They seemed to have an amazing time too! It was refreshing to set aside our phones, leave work behind, and simply relish each other’s company. In the end, that’s what really counts.

What intentions have you set for yourself this Fall?

Make it a priority to dedicate quality one-on-one time with my loved ones. Focus less on worries, spend more time outside, and fully appreciate the beauty of nature.
